Dinners

I love reading about other bloggers and their families, adventures in motherhood, and travels. But most of all, I love reading blogs for meal inspirations. Call me crazy, but what other women eat and cook to maintain their health, satisfy their husbands, and nourish their children is so interesting to me.

With that said, here's what we've been eating for dinner lately. 

Grilled chicken, veggie pasta with grape tomatoes, cucumber and goat cheese, and grilled asparagus. 


Baked tacos. This was a new Pinterest recipe I tried out on my sister and brother in law. I used chicken and ground turkey (since William have up red meat for lent.) It was just okay but made for a nice twist on traditional tacos.

Chicken stir fry with sesame seeds. Yum!


At least once a week we make a big salad for dinner. 


This week we topped it with delicious sautéed shrimp.


Another weekly staple is flat bread pizza. They are quick, easy and delicious. I use Naan whole wheat flat bread, tomato and pesto sauce, and as many veggies as I can load on them...plus a few pepperoni and bacon. 


We combined our leftover pasta salad and shrimp for an easy end of the week dinner. 


I like to try at least one new recipe a week, while keeping our grocery budget in tact. Planning meals is not always easy, but spending time in the kitchen is one of my favorite things to do. 

Athens, my love.

I was lucky enough to get to spend a few hours in one of my favorite places. I have so many memories of Athens and the four years I spent here.  

In the midst of life on Milledge Avenue, I know I was stressed about big tests, home sick from time to time, finding my niche in a huge sea of students, and shedding tears over a few cute frat boys, but when I look back, all of those less-than-easy moments fade into the best times of my life. 

I reminisced over brunch at Last Resort, longing for big sunglasses, a slight headache, dirty feet from dancing in spilled drinks, and my best girlfriends to relive it all with me.

My how times have changed....



Of course I had the frittata with fresh basil, garlic, and feta and the spinach salad. 


Athens isn't quite the same these days. Favorite spots have closed, I feel older than most, and I don't have time for even one chapter of a great book on North Campus. I used to always have time. 

As I sipped my mid day wine, I celebrated the fact that things change. Life isn't meant to stay the same. These days, I can't wait to introduce Wills to these streets I love so much.

All about Breakfast

Mornings are my favorite. They always have been. There's something about the fresh start, quiet time, smell of coffee, and rising sun that lures me about of bed in a great mood.

I always eat breakfast after a cup or two of coffee.

My usual...


9 times out of 10, Wills and I are rushing out of the door and I make a quick English muffin with nut butter, honey and chia seeds and a strawberry or chocolate shakeology. I pack all the goodness and nutrition in early to make room for a glass of wine later. :)


If I have a little more time, I love an egg scramble loaded with veggies and sprinkled with goat cheese and sriracha.


Or a piece of whole wheat French toast with chia seeds, which Wills also loves.


On the colder mornings, we share a big bowl of oatmeal. 

I'm planning, as it warms up, to add in more fresh fruit and yogurt breakfasts. I lean towards savory, filling foods in the fall and winter months and am looking forward to that change!


I make our oatmeal using 1/2 cup of oats, 1/2 cup water, 1/2 cup almond milk, T sunflower seed butter and brown sugar, half of a banana, and a sprinkling of chia seeds. 


Saturday mornings aren't as nutritious and our tradition is homemade bacon, egg and cheese biscuits. Keepin' it real.

Rain, Rain, Go Away

What do you do when it rains for three days in a row?

Reminisce about last week's sunshine...

I do.  But I also relish in a great book, a quiet afternoon, a few too many hot dog dances, and a lot of legos.

Even though we make the most of a rainy day, sunny and 70 is my favorite.  Spring is on the way, and we have been soaking up every second of it outside.  Before the rain came... 







On a side note, Wills would not go near Minnie.  I guess we should think twice about an upcoming Disney trip. :(

His and Hers

What's for dinner?

Quesadillas!

His.
A whole wheat tortilla stuffed with steak, sharp cheddar, mushrooms, and onions and topped with grape tomatoes and jalapenos.

Hers.


Stuffed with spinach, mushrooms, tomato, onions, and goat cheese.


The only missing piece.  A margarita.


But after our weekend fun, we both passed on the tequila and enjoyed our water.
