"What I ate Wednesday"

I started the day with a Chobani Greek yogurt and Kashi bar. I was running late and this was easy to grab as I was walking out of the door.

Lunch was this salad that I am absolutely obsessed with. Seriously, I could eat it every.single.day. It’s what I had on my night alone in Beaufort and again throughout the week. It’s that good, and I can’t get enough. Susie introduced it to us at our Easter oyster roast. The combination of sweet and salty flavors is incredible. If you’re tired of boring lettuce, tomato, and cucumber and need a new idea to jazz up your salad, I highly recommend making this. Like, now.

I used a spring mix lettuce base, red onion, smoked almonds, blue cheese crumbles, strawberries, and pita chips.

This dressing is a necessity to bring all of it together.

Chocolate Shakeology for snack mixed with almond milk, peanut butter, and a banana. So good and so many super-foods in one punch.

Dinner was a simple chicken and broccoli casserole. I ended up running low on broccoli and had a few zucchini in the fridge that needed to be eaten before we head to Beaufort this weekend. I was a little wary and even called my mom to see what she thought. In the end, they’re both green, we love zucchini, and an extra serving of veggies sounded like a good idea, so I went for it. It ended up tasting the same! I don’t think I will make a habit of it, just because William wasn’t so sure of the idea. I will just buy more broccoli, but to avoid wasting my zucchini and coming up short on veggies, it worked! I’ve learned that being adventurous in the kitchen, willing to try something new, and possibly have it flop, is the only and best way to learn to cook.

Wills’ dinner looked similar to ours. He didn’t like it very much, and kept asking for a “bah” meaning a kids organic cliff bar, but we are working on him eating what we eat and hopefully straying away from having a picky little boy. I offered his plate again a little later and had a little more success.

My mom sent me this text late last night: “Fresh redfish for dinner Saturday night. Woohoo!” My dad must have had a successful fishing trip! Yay for us!

William, Wills, and I can’t wait to be there with these four! Land's End, here we come.

Flowers for Mommy...Only

Spending time outside, grilling, eating, having a drink and listening to music, has to be one of my all-time favorite things to do. When the weather is perfect, and the day’s events are winding down, there is nothing more relaxing to me than this. It was one of our main wishes when looking to buy or build a new house – we had to have a great outdoor space.

Now that Masters week is over and our house feels put together, we can finally sit back and enjoy our back patio, fire place and view. So, Monday night, our first night back home, that’s just what we did.

Wills ate his dinner outside, played with Finn, and brought his Mommy flower after flower. I will savor every moment he brings me flowers and hope I am the only girl for a LONG time that gets them.  I can already see this is going to be a problem.  :)

William and I both enjoyed a cocktail as we watched our little boy and talked about our day. It was perfect.

Spring Break

Early Saturday morning, our house was finally Masters ready after months of hard work, worrying, and late nights. Needless to say, the front porch at Land's End was calling my name and has been for a while. I headed to Beaufort and spent one glorious night ALONE! No offense boys, but it was heavenly. I arrived in Beaufort Saturday evening, poured a glass of wine, and headed outside to read. I enjoyed every second of the evening – the front porch breeze, not cooking, my book, a glass of wine or two, a few uninterrupted phone calls with girlfriends, comfy yoga pants, and Sex and the City re-runs.

This night definitely set the tone for a great week ahead. I had a full day of yoga teacher training on Sunday followed by a few days relaxing with Wills and my parents at the beach and on the dock. As always, we love our time at Land's End and can’t wait to get back, all 7 of us, this weekend!

Looking for airplanes. :)

We headed home mid-week to see William and spent the rest of the week enjoying the weather, the golf, a little yoga, lunch with friends, the library, some family time at the park, and the pool.

By the way, a strawberry shakeology tastes even better by the pool in a cold beer mug.  Cheers to a relaxing, fun week and an exceptionally good  great looking Masters champ!

Easter Family Photo

Taking a family picture with an 18 month old is getting increasingly harder by the day.  Here's how our attempt at an Easter picture went.

This is about the best we could do with a squirmy little boy.  Happy Easter!

Easter Weekend Oyster Roast

We had a great Friday night celebrating Easter weekend with family and oysters.  Thankfully, my dad gathered two bushels before leaving Land's End and brought them home to share with all of us.

If you can't get to the coast, bring the coast to you.  Thanks, Dad and Mom.

These boys ate and ate and ate some more.

Susie made a delicious salad of baby arugula, romaine, red and green onions, strawberries, smoked almonds, blue cheese, and pita chips.  I will be recreating this soon.

Still eating...

We ended the night with a warm fire and chatting around the chiminea.

I am so thankful for my family!
